Ingredients
½ pkg. active dry yeast (2 tsp.)
3 cups of warm water
Add 1 ½ tsp. salt
Add 2 – 3 cups unbleached white flour

Cooking Instructions
Prepare 2 round cake pans (8” or 9”): Warm the pans on a stove burner and melt a small amount of pure beeswax into the bottom of each one. Then sprinkle some flour over the beeswax.  

Dissolve ½ pkg. active dry yeast (2 tsp.) in 3 cups of warm water. Add 1 ½ tsp salt. Add 2 – 3 cups unbleached white flour and beat well. (300 strokes to develop the gluten in the wheat). Gradually add enough flour to make dough and knead well for 10 minutes. Divide the dough into two pieces. Shape each into a ball, flatten into a disk shape, and put into the prepared pans. Sprinkle the loaves with flour and press the Prosphora seal into each loaf very firmly, so firmly that it is difficult to pull the seal off, but remove the seal. Pierce the loaves with a toothpick all around the circumference of the loaves and at the around impression of the seal to release air bubbles. Cover with a clean cloth and allow to rest for 30 minutes while the oven is heating to 375 degrees.

Bake the loaves for 30 minutes, then cover them loosely with foil to keep them from browning too much, and bake for another 15 minutes. When done, take the loaves out of the pans and allow them to cool on racks. You may need to brush some of the flour off of the tops.
